Yes, we have made yet another traybake…

This time, we have a simple but delicious Malteser Traybake recipe (or Malteaser Traybake, if, like us, you had no idea how to spell it before searching for said recipe…).

What’s a traybake?

Trust us, Scotland loves traybakes. Pop into any cafe, from the Borders to the Islands, and you’ll find various traybakes on offer.

In the USA they’re often called sheet cakes.

Usually, there’s a standard few like Chocolate Tiffin, Mars Bar Slice, Brownies (like Biscoff Brownies or Mini Egg Brownies around Easter), and a slice of Malteser Traybake.

So we decided it’s about time we add that to our growing traybake recipes list!

This recipe is so simple to make and is a no-bake slice, which many traybakes like this are. It only takes 20 minutes to put together, then you just need to chill in the fridge for 2 hours, and it’s ready to eat!

What is a Malteser Traybake?

A Malteser Traybake is a basic crushed biscuit, melted chocolate and butter case, with Maltesers throughout and then topped with melted chocolate and MORE Maltesers. Sounds sweet and delicious? You’d be right!

It’s very similar to our Mint Aero Traybake recipe, and you could really use it for any similar chocolate.

We opted to use white chocolate topping in this Malteser Traybake recipe to mix things up a bit, but you can definitely use milk chocolate if you’d like to.

What are Maltesers?

Maltesers are a British sweet first sold in 1937, and they can now be found in Europe, Australia, New Zealand, Canada, and most recently, the Middle East.

In the USA, you could use Whoppers as an alternative.

Things you’ll need to make Malteser Traybake

  • 20cm square tin
  • Food processor or ziplock bag and rolling pin
  • Saucepan

Ingredients for Malteser Traybake

For the base

  • 225g malted milk biscuits (or 2 ¼ cups crushed biscuits)
  • 200g milk chocolate (1 cup + 2 tbsp)
  • 125g Maltesers (1 2/3 cups)
  • 160g butter (1/2 cup + 3 tbsp)
  • 3 tbsp golden syrup
  • 1 tbsp cocoa powder

For the topping

  • 300g white chocolate (or milk chocolate if preferred) (1 ¾ cups)
  • 100g Maltesers (some roughly chopped if desired) (1 1/3 cups)

How to Make Malteser Traybake – Step by Step Method

Grease and line a 20cm square tin.

Add the biscuits to the bowl of a food processor and blitz until broken down into fine crumbs. You can also put them in a zip lock bag and bash them with a rolling pin.

Add the butter, cocoa powder, golden syrup and milk chocolate to a saucepan and melt together over a low heat, stirring frequently until smooth. Set aside to cool for 5 minutes.

Add the crushed biscuits to the pan and stir together until completely combined.

Add the Maltesers and stir again.

Transfer the mixture to your prepared tin and smooth it down into an even layer with the back of a spoon.

Melt the white chocolate in the microwave in 30-second bursts.

Pour the white chocolate all over the top of the traybake mixture, spreading it right up to the edges in an even layer.

Scatter the Maltesers all over the top of the white chocolate.

Place in the fridge for at least 2 hours to set. If desired, you can let it come back to room temperature before slicing to prevent the chocolate topping from cracking.

Slice into 16 squares and store at room temp in an airtight container.

Variations to this Malteser Slice Recipe

We opted for a white chocolate topping for this recipe, but you can easily swap for milk chocolate or even dark chocolate (just not too high a percentage of cocoa, or it will be very rich!).

As mentioned above, if you’re in the USA, then Whoppers would be an alternative to Maltesers.

What’s an alternative to Golden Syrup?

Golden Syrup is a thick syrup commonly used in baking the UK and many other places like Australia and New Zealand. It’s made from sugar cane, has a caramel flavour, and looks a bit like thick maple syrup.

If you don’t have access to Golden Syrup, you could substitute with corn syrup, rice malt syrup, or maple syrup.

How long does Malteser Slice keep for?

Not long in our house! But seriously, if kept in an airtight container, it will last for up to a week. It is also possible to freeze it for up to 2 months. The Maltesers on top might go a little soft the longer it’s kept or upon defrosting.

The best way to slice Malteser Traybake

Wait for it to come to room temperature before slicing. You can also dip a knife in hot water and then push the knife through the chocolate and press down to slice through the base.

Notes

Feel free to use milk chocolate for the topping rather than white chocolate, if you prefer.

If you're in the USA, then Whoppers are a great substitute for Maltesers.
