Ingredients

  • For the Turkey Breast
  • 1 whole turkey breast, boneless and butterflied (about 2-2.5 pounds)

  • Salt and freshly ground black pepper, to taste

  • 2 tablespoons butter

  • Butchers twine

  • For the Herb-Infused Butter
  • 1/2 cup (1 stick) unsalted butter, softened

  • 2 cloves garlic, minced

  • 2 tablespoons fresh sage, finely chopped

  • 2 tablespoons fresh rosemary, finely chopped

  • 1 tablespoon fresh thyme, finely chopped

  • Salt and pepper, to taste

  • For the Stuffing
  • 2 tablespoons extra-virgin olive oil

  • 1 large onion, finely diced

  • 2 large stalks celery, finely diced

  • 1/2 cup white wine

  • 8 ounces mild Italian pork sausage, casings removed (substitute chicken or turkey sausage)

  • 1 cup fresh breadcrumbs

  • 1/4 cup dried cranberries

  • 2 tablespoons cranberry sauce

  • 1 tablespoon fresh rosemary, finely chopped

  • 1 large egg, beaten

  • Salt and pepper, to taste

  • For the Gravy
  • 1 cup chicken stock

  • 2 tablespoons cornflour

Instructions

  • Preheat the oven to 350°F (175°C) and line a roasting pan with foil.
  • Season both sides of the turkey breast with salt and pepper. Lay strips of twine on a clean counter, then place the turkey on top, skin side down.
  • In a mixing bowl, combine the soft butter with the minced garlic, chopped sage, rosemary, thyme, salt, and pepper. Mix well until smooth. Set aside.
  • In a large skillet, warm the olive oil over medium heat. Add the diced onion and celery and sauté until they soft, about 5 minutes.
  • Add the sausage meat and cook until browned, breaking it apart as it cooks.

  • Roast in the preheated oven for 1 – 1.5 hours or until the internal temperature reaches 165°F (74°C) and the turkey is golden brown.
  • When the turkey breast is done, let it rest for about 10 minutes.
  • While the turkey is resting, make the gravy.
  • In a saucepan, warm the chicken stock over medium-high heat. Pour the juices from the roasting pan into the pot and stir well.
  • In a small bowl, whisk the cornflour with a few tablespoons of cold water to make a smooth paste (slurry).
  • Gradually whisk the cornflour paste into the hot chicken stock and continue to cook, stirring constantly, until the gravy thickens.
  • Slice the stuffed turkey breast into thick rounds and serve with the gravy.
